Racing dragsters is about as racetrack-themed as I could get with the vanilla scenery and $25k cost limitation, which I ran right up against. It's not that exciting, it's not that intense, but it does look pretty cool. The layout's basically a messier figure-8.
Guests enter onto the track under the stands, and head to the pit to board either the Silver Dragster or the Steel Dragster. The vehicles move to the starting line and wait for the race to begin.
They take off at once. Both dragsters pick up speed quickly as they dive just under the raised track above, then drift into sweeping, interlocking turns in front of more stands. The competition tightens up, but steel pulls ahead as both cars slow down for the next turn. Silver starts catching up as they climb into a turn. The dragsters speed up a bit again, cross a couple more times, and then finish in, conditions permitting, a nearly perfect tie.
Unfortunately, there's some z-fighting on the diagonal striped walls. There wasn't much I could do about that, but I do hope the model for that's changed just a bit in a future update. Also, the "road" - made of roof pieces - won't actually remove the plants that appear on top of grass tiles, so I recommend you change the terrain around this to stone or sand unless that is ever changed.
